Extra Virgin Olive Oil
COMPANY OBJECTIVE: Near Pontassieve, in a place striking and rich in culture and history, is produced our extra virgin olive oil from different cultivars.
The goal is to develop a complete interconnections between cultivars, environment growing form of farming, the sixth planting, management of the olive groves and last but very important time for ripening cultivars
OLIVE GROVES: olive groves stretch for about 60 hectares with 10,000 plants of 3 different olive cultivars frantoio, moraiolo, leccino.
The olives, harvested by hand and by machine, are picked and pressed on the same day with a continuous twophases process.
The harvest begins in late October and continues until the end of November, according to the maturation of cultivars.
2 days after the production, the extra virgin olive oil is filtered.
It is kept in Orciaie of Castle Trebbio where the temperature remains optimal throughout the year
TECHNICAL ASSESSMENT:
the new oil has a beautiful yellow color with green reflexes, limpid; in the nose it has an intense and complex aroma, with rich notes of almond plant almost green, a little cardoon and memory of artichoke.
In the mouth is wide and powerful and gives tones of fresh cut grass.
Slightly bitter taste in the mouth with a good spice.
